Apple Rosemary Chicken Night

So – my friend Felicia suggested that I start a recipe blog after I psychotically sent out pictures of a dish I created last night to all my friends and started giving them all the recipe whether they wanted it or not. I kind of thought it was a good idea.

I’m kind of obsessed with food. I think about it all day long. I love cooking not only because it relaxes me, but because I just love being around food. Shoot, I even love grocery stores. Being surrounded by food makes me happy. Food and vodka is even better. Food vodka and good company = I’m pretty much in heaven. Oh. and a doggie.

Anyways, so I just came back from Barcelona 2 weeks ago. The food there was so delicious. People there eat huge footlong ciabatta sandwiches at 4 am on the street with no shame and I love it. Chorizo is dope too. There was this one chicken restaurant by my friend’s house that sold only roasted chickens. Normally I woudl think that was boring, but being as everything in Barcelona is closed on Sundays and it was the only place open, we went and got them. Those chickens were so amazingly delicous. They tasted like rosemary and had apples inside them as stuffing. The meat was pretty much like falling off the bone and melting in your mouth. So of course I have been thinking about that chicken ever since I came back here and last night I decided to recreate it.

I had chicken drumsticks – I kinda didn’t wanna f*ck with a whole chicken. I also had apples and a bag of onions, so I was on a mission. So…

I rubbed salt on the chicken drumsticks. I heated up oil on a pan and added rosemary to it. I then threw the drumsticks on the pan for just a little bit to brown the skin. I then cut up apples, onions and a little bit of garlic and poured the oil in which i browned the skin of the chicken on top of the mixture. It became basically like an apple, onion, garlic salad with the rosemary oil dressing. I also added salt and more rosemary. (my trick to adding salt is to pretend like the whole thing is laid out flat and to make sure every area is lightly covered, so i flip the mixture in a bowl enough where I think I have every area covered). I then laid the apple onion salad mixture onto a baking pan and placed the raw, but browned drumsticks on top and baked it at 400 degrees for about 50 minutes (or untill the chicken is done).

Guys – when I tell you it was one of the most delicious things I have ever tasted, I am not lying. My friend from work, Chris came over and me him and KC (my roommate) just sat there and pigged out till the pan was empty and we dipped our fingers in there and licked it clean. Literally.. Here is what it looked like…
